Kadhai, tawa or frypan: building a small kitchen

Most kitchens do not need eight pans. They need three good ones and the discipline to wash them.
The kadhai
Deep walls, curved base — sabzi, dal tadka, shallow frying, anything that needs to be tossed. If you buy one piece, buy this one.
The dosa tawa
Flat, wide, even. Dosa and chilla obviously, but also parathas, omelettes and the quick sear of leftover rice.
The frypan
Eggs, paneer, fish, the single-person dinner. A 20cm frypan is the one that never makes it back into the cupboard.
